Menu Plan Monday 10/5-10/11

It's that time again (already?)! And this week (as all weeks are) will be a crazy one! I am starting my new job today, and wouldn't you know it, mr.pate is scheduled to work almost all nights at Starbucks! Ugh! So we will barely see each other, and I will be carting dinner up to starbucks several nights, but its only one week. So here is the plan:

Monday: Brown Sugar, Soy & Worcestershire Pork Chops, green beans and brown rice

Tuesday: Asian Tomato Beef in the Crock Pot

Wednesday: Dinner at Dustin's (this is mr.pate's twin brother- i forgot to mention this for those of you who dont actually know me!)

Thursday: Chicken Pot Pie

Friday: Salmon, mashed potatoes and green beans

Saturday: Out or leftovers

Sunday: Lunch at Peppers! and dinner is with our Dinner for 8 group!

Brown Sugar, Soy & Worcestershire Pork Chops
1 cup Soy sauce
1 cup worcestershire sauce
1/3 cup brown sugar

1. mix all ingredients, place pork chops in a dish and cover with marinade.
2. let marinade for at least 1 hour but it is better for 4 or more hours.
3. grill pork chops.

No Guilt Chicken Pot Pie

1 can (10 ¾ oz) Campbell’s 98% Fat free Cream of Chicken Soup

1 package (about 9 oz) frozen mixed vegetables, thawed

1 cup cubed cooked chicken

½ cup milk

1 egg

1 cup reduced fat all purpose baking mix

1. Preheat oven to 400ยบ.

2. In a 9 inch pie plate (or a smaller baking dish) mix soup, vegetables and chicken.

3. Mix milk, egg, and baking mix. Pour over chicken mixture.

4. Bake 30 minutes or until golden. Serves 4.
